Chocolate Ice Cream (No-Churn)
Deep chocolate no-churn ice cream made with cocoa, melted dark chocolate, whipped cream and condensed milk. Smooth, rich and scoopable.
This chocolate ice cream uses two forms of chocolate: cocoa powder for depth and melted dark chocolate for richness and a smooth set. Both are cooled before they meet the whipped cream, which is the one step that matters; warm chocolate will melt the cream and you will lose the airiness. The result is dense, glossy and properly chocolatey, not just sweet. It is a good partner for brownies, cakes and banana, and a favourite with children.
Method
- Heat the milk in a small pan until steaming, then switch off the heat. Whisk in the cocoa until smooth and lump-free.
- Add the chopped dark chocolate and stir until completely melted and glossy. Cool to room temperature, about 15 minutes.
- Whisk the condensed milk, vanilla and salt into the cooled chocolate mixture until smooth.
- Chill a bowl and beaters, then whip the cold cream to stiff peaks.
- Fold a third of the cream into the chocolate mixture to lighten it.
- Fold in the remaining cream gently until the colour is even, with no pale streaks.
- Fold in the chocolate chips if using. Transfer to a lidded container and press butter paper on the surface.
- Freeze for at least 6 hours or overnight until firm. Rest for 5 minutes before scooping.
Chef's tips
- Cool the chocolate mixture fully; a warm base will deflate the cream.
- Sift the cocoa to avoid bitter lumps.
- If your cocoa is very bitter, add 1 extra tbsp of condensed milk.
- Dip the scoop in warm water between scoops for neat rounds.
What to serve it with
Serve with a drizzle of warm chocolate ganache, crushed nuts, or beside a slice of eggless sponge cake.
Storage
Freeze covered for up to 2 weeks. Re-cover the surface with butter paper after each use.
Variations
- Add 1 tsp instant coffee to the hot milk for mocha ice cream.
- Fold in crushed chocolate sandwich biscuits for a cookies-and-cream style.
- Swirl in 2 tbsp peanut butter before freezing.

Recipe questions
Why is my chocolate ice cream not creamy?
The chocolate mixture was probably still warm when folded into the cream, or the cream was under-whipped. Cool the base completely and whip the cream to stiff peaks.
Can I use only cocoa powder?
Yes, but dark chocolate gives a smoother, richer result. Without it, use 4 tbsp cocoa and expect a lighter, slightly more bitter ice cream. Sift the cocoa first, and add a little extra condensed milk if the flavour tastes too bitter.
Which dark chocolate should I use?
Use a good eating dark chocolate or couverture, around 50-60% cocoa. Compound or cooking chocolate gives a waxy texture. Avoid very bitter 70-80% bars here, as they can make the ice cream taste sharp and set harder.
Can I make it without a mixer?
Whipping cream to stiff peaks by hand is possible with a balloon whisk and a cold bowl, but it takes patience and effort. A hand mixer is much easier.
