Eggless Panna Cotta
A silky, wobbly vanilla cream dessert set with agar-agar, so it is fully vegetarian, served with a fruit sauce.
Panna cotta is a simple Italian cream dessert that sets to a silky, gentle wobble. This version uses agar-agar, so it is fully vegetarian and eggless, and it needs no oven.
Method
- Mix cream, milk and sugar in a pan; warm on low heat until the sugar dissolves. Do not boil.
- Sprinkle agar-agar into the mixture, whisk, and simmer gently 2 minutes.
- Remove from heat and add vanilla.
- Pour into greased cups or glasses. Cool, then refrigerate at least 4 hours.
- Unmould or serve in the cup with fruit sauce.
Chef's tips
- Too much agar makes it firm and rubbery; measure carefully.
- Dip the cup in warm water for 5 seconds to unmould.
- Agar-agar sets firmer than gelatine and at room temperature, so measure it carefully and simmer it for a full 2 minutes to dissolve it.
