Gujarati Masala Khichdi
One-pot rice and moong dal cooked with vegetables and gentle spices: comfort food, best with kadhi.
Masala khichdi is one-pot comfort: rice and moong dal cooked with vegetables and gentle spices. In Gujarati homes it is served with kadhi, papad and a spoon of ghee.
Method
- Wash rice and dal together and soak for 20 minutes.
- Heat ghee in a pressure cooker; add cumin, cloves and cinnamon.
- Add ginger-chilli paste and vegetables; sauté for 2 minutes.
- Add rice, dal, turmeric, chilli powder, salt and water.
- Pressure cook for 3 whistles. Let the pressure release naturally.
- Serve hot with ghee, kadhi, papad and pickle.
Chef's tips
- Add water until it is slightly loose; khichdi thickens as it cools.
- Finish with a spoon of ghee for the classic flavour.
