Palak Paneer
Paneer cubes in a smooth, bright-green spinach gravy with garlic and mild spice.
Palak paneer is soft paneer in a smooth, bright-green spinach gravy. Blanching the spinach and shocking it in ice water keeps the colour vivid.
Method
- Blanch spinach in boiling water for 2 minutes, then plunge into ice-cold water. Blend with green chillies to a smooth puree.
- Heat oil and butter, add cumin and onion; cook until golden.
- Add ginger-garlic paste and tomato; cook until soft.
- Add the spinach puree and salt; simmer for 5 minutes without covering.
- Add paneer, garam masala and kasuri methi; simmer for 3 minutes.
- Stir in cream and serve with roti or naan.
Chef's tips
- The ice-water plunge keeps the spinach a vivid green.
- Soak paneer in warm water for 10 minutes for softer cubes.
