Veg Cheese Quesadilla
Crisp tortillas filled with melted cheese, corn, beans and peppers, ready in 20 minutes.
A veg quesadilla is a crisp, golden tortilla folded around melted cheese, corn, beans and peppers. It takes about twenty minutes and suits snacks or a quick dinner.
Method
- Sauté onion, capsicum, corn and beans for 2 minutes with the seasoning and salt.
- Lay a tortilla; spread cheese, the vegetable mix and more cheese. Top with a second tortilla.
- Cook in buttered pan on medium heat 2 to 3 minutes per side until golden and the cheese melts.
- Cut into wedges and serve with salsa and sour cream.
Chef's tips
- Medium heat lets the cheese melt before the tortilla burns.
- Do not overfill, or it will leak.
