Whipped Cream Frosting
Light, stable whipped cream frosting for cakes and cupcakes. Learn the right cream, the chill and the stiff-peak stage for clean piping.
Whipped cream is the lightest of all frostings and the usual choice for birthday cakes in India. The details decide whether it holds or weeps: use whipping cream with enough fat, chill everything and stop at stiff peaks. A little icing sugar sweetens it and helps stabilise it, and a spoon of milk powder or cornflour gives extra hold in warm weather. It is not as heat-proof as buttercream, so keep the frosted cake chilled until serving.
Method
- Chill a mixing bowl and beaters in the freezer for 20 minutes. Keep the cream in the fridge until needed.
- Sift the icing sugar, milk powder and cornflour together to remove lumps.
- Set the cold bowl in a larger bowl of ice water. Pour in the cream and start whipping on low speed.
- When the cream begins to thicken, add the sifted sugar mixture and vanilla.
- Increase to medium-high and whip until soft peaks form, then continue until stiff peaks hold their shape and the cream looks smooth, not curdled.
- Stop at once. The cream should hold a firm peak when you lift the beaters.
- Use immediately, or keep in the fridge for up to 30 minutes before frosting.
Chef's tips
- Whip just until stiff; a few seconds more turns it grainy, and badly over-whipped cream cannot be fixed.
- The ice-water bath is the most reliable way to whip cream in hot weather.
- If it slightly over-whips, gently fold in 1-2 tbsp of unwhipped cream.
- Frost a completely cooled cake only; warm sponge melts the cream.
What to serve it with
Use to frost vanilla, chocolate or red velvet sponge, pipe on cupcakes, or layer with fresh fruit in a trifle.
Storage
Keep frosted cakes refrigerated and eat within 2 days. Leftover whipped cream keeps in the fridge for a day in a covered box and may need a quick whisk.
Variations
- Fold in 2 tbsp cocoa powder sifted with extra icing sugar for chocolate whipped cream.
- Add 2 tbsp strawberry or mango pulp for a fruity version.
- Fold in 1/2 tsp cardamom or a few drops of rose water.

Recipe questions
Why is my whipped cream not thickening?
The cream is probably too warm, or it is low-fat cooking cream. Chill the bowl and cream thoroughly, and use whipping cream with at least 25% fat.
How do I stop whipped cream from melting?
Keep it cold, add a spoon of milk powder or cornflour for stability, and refrigerate the cake. In very hot weather, whip over ice. Frost just before serving where possible, and keep the finished cake in the fridge until the last moment.
Can I whip cream by hand?
Yes, with a chilled bowl and a large balloon whisk, though it takes 8-10 minutes and a tired arm. A hand mixer is much easier.
Can I colour whipped cream?
Yes. Add a few drops of gel colour at the soft-peak stage and whip briefly, since too much liquid colour can loosen the cream. Fold the colour in gently by hand if you want to avoid over-whipping at the end.
